WHAT IS GALICIAN BEEF? At Basco, we only source the highest quality beef from Galicia in the Northwest of Spain. Our Galician beef fillet comes from retired dairy cows between 8 and 12 years old. This type of ageing allows more natural grass-fed marbling of the beef so that its comparable to the marbling of genetically optimised grain-fed US, Japanese and generic Wagyu beef. These older cows are chubbier animals, have a higher percentage fat content and as such have more marbling, giving the fillet a distinct and unique flavour. All our galician fillets are dry-aged for a minimum of 7 days. WHAT IS GALICIAN FILLET? Also known as Filet Mignon, Tenderloin, and the Eye Fillet, this is the most sought-after Galician beef cut, prized for its tender quality. Our Whole Galician fillet is lean, mean, and amazingly tender which will melt in the mouth. Low in fat, but rich in flavour when cooked, this is a Rolls Royce of Galician beef, that can be enjoyed by either cooking it as steaks or roasting as a whole piece. HOW TO COOK A GALICIAN FILLET? The perfect way to cook and serve a Galician Fillet Steak is to bring the fillet to room temperature-for at least 6 hours. Cut the fillet steak into 3-inch thick medallions and salt both sides of the steak with some rock salt 30 minutes before cooking. Cook the steak on charcoal barcecue for 4 minutes on each side, allow to rest for 2 minutes in a warm place. To serve the steak, slice thinly accross, season with salt flakes and serve on a warm plate or platter. HOW WILL I RECEIVE MY GALICIAN FILLET? Despite having had a bit of an issue with my delivery, which was sorted as best as possible by customer services, I was extremely happy with the quality of this meat and would buy again. Lovely marble, super tender as expected, and very flavoursome. I have recommended this to some of my friends and would recommend anyone here to try.

could be bad luck, I received two pieces of meat from the same box, and all the ice packs were wrapped around the pork when I opened the box, the pork was frozen solid when I received it but the fillet was no longer even vacuumed, and the meat was just sitting in blood pool. Despite this, we decided to cook some to see if it might still be okay. For me, the smell was not very pleasant, but my dog loved it.

I used this as the centrepiece to a dinner party for 9. It fed everyone very generously with lots of left overs, including the tail of the fillet which I used to make a stroganoff another night. Very nice, deeply flavoured beef, which was particularly pleasant in a fillet cut which can sometimes be a bit lacking in taste.

Firstly, the flavour and tenderness is phenomenal. Genuinely top-drawer. However, you do have to do a fair bit of butchery to remove any silver skin and tendons, especially if you're making a beef Wellington or want the best bit to cut steaks from. Still, I managed to make a Wellington just using the centre cut and It easily fed 6 people plus I had a lot of other nice pieces of beef left over to make mini steak medallions or even a super posh stirfry. So, if you manage to grab this when on offer, it's remarkable value considering the quality.

I bought this to freeze down for one of our Christmas meats. Before doing that I sneaked a couple of 2inch steaks. I cooked one medium rare and one medium well. Regarding flavour and texture this is very different to normal fiillets. If you prefer mature cheddar to mild or medium you will love this. It is more gamey but don’t be put off as not as more subtle than say venison or pheasant. After 10 minute rest time I did find the medium rare far too chewy as the fat did not have time to render unlike the medium well one. Whilst I like medium rare normally I would treat this more like a rib eye, and then some, and would finish a 3 inch cut in a conventional oven. I don't have a sous vide but I reckon it would work very well then finished on a cast iron griddle pan if cooking for a crowd. I dropped a star as even though I went for a 2 inch steak going by the cooking recommendation it would have been inedible at 3 inches. Hoping for even better taste when roasting albeit not a beef wellington as I had planned. Ps. There was a lot of sinew on my piece so whilst you want to retain the yummy fat you won’t regret 10 minutes spent trimming.

The quality and flavour of the Galician Beef Fillet is excepional. Cut into fillets to use immediately, or kept whole and frozen, the quality remains excellent.
