“Nice colour, lovely texture. lovely nutty rich flavour. And it is really organic(bio). A semi wholemeal loaf doesn't require any fancy recipe or messy around to come out with nice result and taste great. Toasts in the mornings after are special, and when freshly cooked it has a nice crust.
The only thing I'd say is that it requires someone to understand that T80 isn't going to behave like a T55.”

“Makes great sourdough. If you’re using a recipe to handrail you through a loaf this flour will throw you off kilter. Reduce your water down by about 5-10% and work from the feel of the dough rather than the absolute quantities.”
