“This is a good if not great flour. Great in T80 baguettes (90% T80 & 10% T65) and in tourte du meule, either 100% T80 or with 15% T65. The 4 out of 5 is a comparison to the CRC variety. Both flours were great, but I didn't see enough of a difference in the organic to warrant the extra spend. Next time I'll stick with the CRC variety instead. Like the other reviews say, I would dial down the water by 5-10% and work back up, especially if using non-French recipes. 64-68% is a good hydration level for consistent results I find (in my kitchen anyway)

“Took some time to get used to. At first I was puzzled whether this is a wholemeal or white flour. Maybe a bit of both. Dough came out wetter after mixing but nevertheless rose very well. Sourdough starter leftover pancake/waffle made with this flour is also light and tasty.”
