When my previous supplier of quality flour ceased trading I had to try and make a flour mix that produced a similar loaf to the ones we loved. Diax has given a moistening of texture to the bread and also gives a slightly sweeter taste; one step on the way to our ideal mix.

Shelf life of this item is less than 6 months a lot less than a bag of flour from a supermarket. I phoned to ask why the date was so short and was told after that date you would need to use more. I can’t recall seeing anything on their website about life of or storage requirements my fault expecting a quality product. Beware

Thank you for your review of Diax Heather, following your phone call. We did try to point out that Diax is not a bread flour but is an active, natural, ingredient used in very small amounts in proportion to the amount of flour. We do describe that you only use 1% diax to flour (10g Diax for every 1kg flour), so the 500g you bought will improve a lot of flour! It is an active ingredient and this will gradually fade with time, much like yeast. Keep it in a sealed container in a cool, dark place and you can use it for quite some time - but better to get a small amount at a time.

Used for malt loaf in a small quantity. Not enough used to be able to tell if it made any difference, but loaf was very malty.
