I eschewed the traditional lentil accompaniment, as it would have meant breaking keto. I hope this does not mean that I will be poor this year. It was Jan 2nd, anyway - banish the omens.

I cooked the cotechino for an hour in the Instant Pot, with an onion, celery, rosemary, bay and sage.
The accompaniment is leek, cauliflower, and kale, lightly braised in butter and a little of the cooking stock, and a brilliant savoury sabayon, made with a reduction of ACV, white wine and tarragon, whipped in a double boiler with one egg yolk and one whole egg. (The recipe called for 4 yolks, but I didn't want the waste whites.) As you can see, I whipped it a little too long, and it got a bit scrambled, but still tasted wonderful. Next time that mistake will be easy to avoid, and this recipe is a keeper.”
