“I had not experienced these culinary triumphs until quite recently. As suggested on the Swaledalw site I served the first on a bed of lentils with gently fried onion and tomato and half a red pepper for taste and colour. Lovely jubbly. 2nd one I served with sauteed potatoes plus onion, peas and pepper in with the sautee. This version is much preferred by the boss who is less keen on pulses than I am. Either way the flavour of the sausage, rich and tasty, belts through for a wonderful meal.

“Good quality. Make a most wonderful sausage for the 'soup' a french term and this reminds me of a butchers sausage we used to buy. Can cook it with wonderful guineafowl stocks and mushrooms or tomato based with little pits of pasta and or potatoes and lots of healthy vegetables.”

We’re fortunate enough to have Cotechino in Bologna and we found it wonderful. We have also tried the Italian ready cooked cotechino which was also brilliant.
Swaledale’s Cotechino is on par with either of those and was lovely to eat today!
