These are actually better than the Italian version available from Camisa in Soho - they are much firmer in texture and consequently more versatile. Still awaiting delivery of this order, now expected Tuesday 13th owing to supply chain issues

Cotechino was very tasty. As instructed, I cooked it slowly in water for 90 minutes, and then fried the slices, serving it with lentils. It tasted very authentically Italian.

Very solid - works beautifully in a soup with cabbage etc- not quite the same texture as an Italian version, slightly heavier - cuts beautifully. Very happy to see it being produced!

Been looking for an Italian sausage, found this one at Swalesdale , really lovely flavour and versatile

It’s changed shape since I bought it last. Now longer and thinner. I haven’t tasted it yet so I can’t comment on the taste.

A revelation. Never heard of it until last week now a massive fan. We cooked it in our instant pot in stock for 1 hr and then left it to cool a little. There was no need to remove the skin as it was almost melting away. We cut it into rounds and fried it off for a little colour and crispness. Served over lentils with a truffled mash. The sausage was so unctuous and flavoursome and the spicing was perfect. I'm going to become a Cotechino evangelist.
