“A revelation. Never heard of it until last week now a massive fan.
We cooked it in our instant pot in stock for 1 hr and then left it to cool a little. There was no need to remove the skin as it was almost melting away. We cut it into rounds and fried it off for a little colour and crispness.
Served over lentils with a truffled mash.
The sausage was so unctuous and flavoursome and the spicing was perfect. I'm going to become a Cotechino evangelist.”
