“This is a great version of the famous Italian sausage, fantastic in soups. The Italian and even provençal French version (artisan butcher 'saucisse menagé' if you can find it!) are classic traditional butchery. The Swaledale version is very chunky and meaty whereas the Italian versions I have eaten are a finer mince, including finely minced rind. We are very fortunate to have a butcher bringing us artisan products of this quality and character.”
