Harina Semolosa de Trigo is a special frying flour made from 100% Andalucian Wheat Flour made by Las Panaeras Sevillanas outside Seville since 1975. This flour is the authentic flour used to fry calamares and make proper pescadito frito! Our Harina Semolosa de Trigo has the quality of leaving very little residue in the frying oil when frying fish or other foods, this way it reduces the amount of burnt particles floating in the oil or sticking to foods when draining them out. This flour is great for us because my wife can eat it without problems, whereas flour milled in the UK causes gluten-intolerance problems. It's not ideal for bread-making, but it only claims to be good for frying, so I shouldn't complain! A bread-making flour like this would get 5 stars.
