“I've been using Matthews T55 flour for some time now and I have made normal loaves, rolls, baguettes, Christmas bread, croissants and old-fashioned English muffins. It's low in protein which is really good for my husband, and an excellent flavour, texture and crumb. Even if the making of the bread goes a bit awry (ie I've forgotten it and it's risen too much) Matthews T55 always bakes really well and the quality is perfect. I either buy it directly from Matthews themselves or from BakeryBits. All my baking equipment came from BakeryBits, including baking stone and flour tubs and I'll certainly be coming back for more!
