“I've found this flour to be disappointing. I'm a fairly experienced home bread baker, and I have succussfully used other French T65 and T55 flours to make sourdough baguettes. But with this flour, I end up with a dough that has absolutely no elasticity -- it just pulls apart when I try to stretch it. The consistency and elasticity seem just fine after kneading, but after bulk fermentation, all the elasticity is gone, and I can't even properly shape the baguettes. Clearly something is going wrong with the gluten, and maybe there's somethint I'm doing wrong. Perhaps dough made with this flour needs to be handled differently from what I'm accustomed to, but I've tried two batches of this flour now (as well as their organic T80), and I've gotten consistently disappointing results. I'm giving it three stars because the taste is fine, and (given all the positive reviews) I feel like maybe there's something that I'm doing wrong. But I don't think I'll be ordering this again.”
