A useful addition to your dough. .5%-1% is all that`s needed - anything more than that will give a `gummy` feel to the bread. I can`t be totally sure of any other additional benefits yet, but it certainly gives a nice golden crust!

I was expecting some dramatic results but there was very little difference for me. Maybe it's my oven but I use a bread stone and high temps to start with.

Diax has given my bread a richer crust colour, a smoother crumb and more lift in the oven. I have used it for tin bread, bloomers and malt loaf and I have had excellent results. It is very easy to use, just put it in with your flour and very little is needed and so a kilo bag will last a long time. This is a product that I have been looking for for a long time, it is something that is used in the baking industry, but not been found for private use. so pleased I found it.
