Thanks again Steven for your review. Yes, after a good number of year making it by hand (my mother started me young), I can definitely agree it is a lot less hassle. So much so, I now just use my own pastes and love the results. We are planning on releasing other pastes soon. For your information, we are upping the heat in the Yellow and Jungle pastes for the next batch by changing the variety of chilli we are using. Jum

Thank you, Kevin, for your lovely review. All I want is for people to enjoy Traditional Thai curry as they would if you came to my home for dinner. I used to make my paste by hand for the last 40+ years (my mum started me young), now, I just use my own paste at home, and very happy. I want to bring some new pastes to you all, but I just want to make sure that first, we are getting things right every step of the way. Reviews like yours help me take those steps more confidently. “Best green curry I've ever made; delicious! Spice level is perfect for me; for those who aren't so tolerant it's a bit much, so for them I reduce the proportions. Addictive”

Thank you for your wonderful review, and congratulations on your best ever Green curry. I agree, that our Green Curry has been a little hotter than usual, but that's because we use fresh natural ingredients, so the heat can vary, which can be the case when you make it at home. So you are right to suggest that using less paste will reduce the heat, or adding more fluid. Green Curry is traditionally quite fluid as a curry, while some prefer the sauce much thicker. Jum
