“As with all Swaledale meat this was fantastic quality with a lovely flavour. However the cut is odd and a bit tricky to cook and carve. There are two bones -one on the lower lean side (expected) but another in the middle of the meaty bit. This one makes it tougher to get constant contact of the meat when cooking. Recommend finishing in the oven - and it takes longer than suggested. 5 mins on top then 12 mins in the oven at 170 fan for medium rare”
