I’ve seen the American BBQ shows cooking these briskets low n slow for years but never been able to lay my hands on one from the local butchers. So glad I’d found this website and online butchers to be able to provide them.
The 1st one I ordered was cooked on the bbq for about 7 hrs over a low heat, the meat was just as those chefs described - very moist as the fat layers melt over time.
But what they can’t truly describe is the flavour. This meat is like nothing I’ve tasted before. It’s beef, but not as you know it.
Ordered 2 more recently and will be getting them on the bbq at the weekend.”

“Very little trimming needed at all. Rubbed with Franklin BBQ brisket rub, then on the Masterbuilt gravity smoker for 9 ish hours at 250f.
