“What a slab of meat, perfectly trimmed, I love the fact there is a generous amount of soft fat left on the cut. Really soft and able to fold it back on itself and then some. This is my 1st time in the brisket arena so I was a bit nervous I didn't mess it up. Dry rub on for 12 hours and an 8 hour low and slow smoke. I wasn't disappointed with the results and can't wait for perfecting this cut.”
