Beautiful steak with a very tasty edge of fat .I bought the same steaks from Swalesdale a couple of years ago and still the same superb quality .

Had these yesterday and despite not over cooking found them very tough and gristly.

Bone-in sirloin naturally contains seam fat and connective tissue, which contribute to its depth of flavour but do require careful cooking and slicing across the grain once rested.
