I love, love, love this French grain flour. It makes the best Cobbs and baguettes ever. Perfect with sourdough too. I just wish I could buy it locally. Adding postage to the flour makes it expensive.

I hadn’t come across this variety before but spotted it in the Ludlow Farm Shop and it’s now my favourite flour. Absolutely superb sourdough results with this, better than anything else I’ve used, regardless of how sloppy I am with my recipe!

I regularly use Belle Blanc T55 to make sourdough bread. Excellent taste and it makes really good toast. (Any chance of a T85 from Matthews? That would be worth a go as well.)

My son is not coeliac but has a “general”wheat intolerance, however after I was given some advice in a health shop, he is delighted that he can now eat bread, and other baking made with Spelt flour and/or French flour both of which have remained the same for years, Probably because they have not been “cross pollinated” etc., another factor is the way the grain is processed and ground. This flour is perfect and the information may be interesting to other “bakers” who have members of the family who also suffer, really worth a try .

Oh mon dieu, cette farine est superbe, which we all know is French for, Oh mon dieu, cette farine est superbe. We tried this flour out on a whim, and are so glad that we did. The first bake of 3 beautiful, light, crusty baguette later, we are hooked. This flour will now be a regular on my usual order from Mathews, lovely crust, and very tasty bread, that made the cornish butter taste even better. Many thanks Mathews, well done.
