Consistent light and airy texture and excellent taste. Kneads up easily. Makes great baguettes, brioche and standard loaves. My preferred flour for mixing with heavier wholewheats.

I've been using T55 flour from Matthews for a few years and it's the only flour I use for bread, rolls, baguettes, muffins and croissants. I have 5 x 1.5kg bags on monthly subscription, occasionally missing a month, and have perfect bread all year round. I have used Matthews flour for years, but started ordering directly from them during the pandemic and kept the order up ever since. I definitely recommend this flour, as the bread nice and light and springy and a terrific old-fashioned taste. Thank you Matthews.
