At Basco, we source the finest Galician beef from the Northwest of Spain. Our Galician beef range comes from retired Frisona dairy cows between 6 and 8 years old, allowing for natural grass-fed marbling. These older cows have a higher percentage fat content and more marbling, resulting in a unique and distinct flavor. Each Galician rib steak is dry-aged for a minimum of 35 days. I could not wait for this to arrive and cooked it on the barbecue. I was not disappointed. Be careful not to over-cook it and do let it rest. A beautiful piece of meat with the right amount of tasty fat running right the way through. Exceptional
