At Basco, we source the finest Galician beef from the Northwest of Spain. Our Galician beef range comes from retired Frisona dairy cows between 6 and 8 years old, allowing for natural grass-fed marbling. These older cows have a higher percentage fat content and more marbling, resulting in a unique and distinct flavor. Each Galician rib steak is dry-aged for a minimum of 35 days. Flavour incomparable to British beef...yes, some may be put off by the high level of marbling and general fat content, but bone and fat are always going to be the flavour sources. This is top drawer succulent rib steak...After getting to 293K (around 20 deg C) then salting 30 mins prior to cook, I bbq'd using cedar wood and added rosemary and lemon thyme to white coals prior to cooking...then rested for 10 mins...! You need to know what you like to enjoy this absolutely amazing cut.

Sometime you taste something that makes you realise how we are being short-changed with most of the meat sold in the UK: and this Galician rib steak does just that. Richly marbled meat that tastes divine. Best cooked on the barbeque where the fat melts and crisps and merges with the smoke to produce a flavour that sings on the palette.
