Iberico Baby Back Pork Ribs, Acorn & Herb Flavored, High in Mono-unsaturated Fats, 1.2Kg Reviews

4.8 Rating 328 Reviews
Read Basco Fine Foods Reviews

Iberico Baby Back pork ribs are cut straight from the Iberico pork loin. They are very succulent and tasty while maintaining our excellent quality. These ribs are smaller in size than those of a standard white pig, but the flavour of Iberico ribs is far superior. The indigenous black Iberico pigs roam the Dehesa forests of southwest Spain, where they graze on herbs, grass, and most importantly, acorns. This diet adds wonderful flavour to these Baby Back pork ribs, and the exercise they get fosters the marbling that makes Iberico pork ribs so special. The acorn and herb flavoured pork is high in mono-unsaturated fats that melt at low temperatures, and is more healthy than the fat from normal pork. Iberico Baby Back pork ribs have a higher fat content than standard white pork ribs, but their flavour is more complex because of the grass, herbs, and acorns on which the animals grazed. They are easy to cook and are a great choice for anyone looking to try something new.

This is the 6th rib we bought from Basco. It’s extremely flavoursome and taste 100% iberico! We brown it in the pan n roast it under 180C for 7 minutes. Salt and black pepper are the only seasoning used. The fat is light and not greasy. Truly heavenly. So pleased to be able to enjoy such great meat.

One package of Iberico back ribs provides two racks. After removing the membrane and trimming fat a single package will feed four hungry adults. I salted (dry brined) the racks and left them uncovered in the fridge for two days, then covered them in a pork BBQ rub (usual: paprika, brown sugar, black pepper, garlic granules, mustard powder) then placed them in my ceramic grill set for 107C-225F for three hours with chunks of apple wood. After three hours they were done. Perfectly. Juicy, falling off the bone, delicious. Best ribs I've ever had. We're getting more of them.
