“I do bake bread every week including sourdough using my own leaven, but I have never used fresh bought yeast, just fast acting. It was interesting to read about the difference in the manufacturing process vs. non organic which does appeal to me, so I thought I would test it by making a 100% Spelt loaf which is always a challenge to get a risen crust, mostly they look sunken, does not affect the flavour just looks a little unappetising. I am very happy to report that the rise was good and indeed the crust stayed convex, most importantly the taste of the loaf had improved. I am a satisfied customer who will be buying this product again.”
“I used the yeast on my recent bread baking session and was very pleased with the results. The pack suggested using all 42 gms to 500 gms flour. All my recipes suggest between 10 and 12 gms of fresh yeast per 500 gms flour, so that is what I used. The loaves came out well, slower to prove than with dried yeast but were moist and with a good crumb. I usually use dried yeast, but I have purchased fresh yeast on-line occasionally. The biggest drawback to buying the fresh yeast was that I never knew precisely when I would receive the yeast. That made planning my baking sessions quite difficult as sometimes the yeast would arrive just after I had finished a session and then had to sit in the refrigerator until my next session. If you are able to offer fresh yeast with a 2/3 day delivery then I would be more than happy to use that service.”
“Baked Rosemary/Raisin loaf and a Spelt loaf with the fresh yeast. Delighted with results. Excellent rise and perfume of home baking filled the kitchen.”
“I found that this brand of yeast is slightly more active than the fresh yeast that I normally use from Morrisons (Yes, I know, I know), so I cut down the amount by about 25% and it did the job perfectly. It's splitting hairs really, the first loaf turned out fine too, sorry that I don't have any pics. If you decided to sell this on your website, I'd buy it, no problem. Thanks for letting me try it!”
“2 samples of the yeast were received. The following remarks summarise my initial impressions from the brief test. 1.The yeast smelt like a brewers beer yeast but the resulting bread was not obviously flavoured by the yeast. 2.The yeast gave a slower rise than fresh yeast from a supermarket. (I often use Morrison's fresh yeast), even when using the Bioreal yeast at about the recommended level which is 1.5 times the level of yeast that I would normally use. 3. The bread resulting when using the Bioreal yeast had a fine even structure with small "holes". It was soft but very firm, not easily forming crumbs when sliced, so good thin slices could be easily made. 4. The first impressions were thus very good, but I need to experiment further to see if the better results were simply due to a lower activity than Supermarket yeast or due to some inherent superiority of the Bioreal yeast. Yours Sincerely A H Clements”
“I am very impressed by this yeast and would highly recommend this product. The packaging is good and the yeast remained fresh and crumbly when kept in the fridge for more than a week.It was very quick to start bubbling and doubled in size far quicker than the standard dried yeast I use normally. The flavour of the finished loaf was superior to normal and I certainly will be placing an order. The packaging stated it was enough for 500g of flour, but less could be used if you want to be economical. Fantastic.”
“Made two loaves a Barleycorn flour cob using 14g yeast to 500g flour and a prune and chocolate loaf using 20g yeast to 500g flour, 200g chopped prunes and 200g chopped dark chocolate. Both tasted lovely, took a little longer to rise compared to dried yeast but excellent crust and crumb. Have sent some pictures of the loaves to your customer services email ftao Patrick. Thanks for the yeast. Kind regards Roy”
“The yeast arrived fresh and well packed. I stored it in the fridge to 2 days and then made 60/40 brown/white very strong flour bread. The dough rose quickly on the first and knocked back proving and the bread tased good, with an even spread of rise. I normally use fast action dried yeast and the Bioreal yeast worked as well, with a slightly better taste. I would use it again, but cost and longer term storage are a problem. I have frozen fresh yeast before when bought in quantity but the defrosted yeast is more difficult to use and loses some goodness.”
