Baked Rosemary/Raisin loaf and a Spelt loaf with the fresh yeast. Delighted with results. Excellent rise and perfume of home baking filled the kitchen.

I used the yeast on my recent bread baking session and was very pleased with the results. The pack suggested using all 42 gms to 500 gms flour. All my recipes suggest between 10 and 12 gms of fresh yeast per 500 gms flour, so that is what I used. The loaves came out well, slower to prove than with dried yeast but were moist and with a good crumb. I usually use dried yeast, but I have purchased fresh yeast on-line occasionally. The biggest drawback to buying the fresh yeast was that I never knew precisely when I would receive the yeast. That made planning my baking sessions quite difficult as sometimes the yeast would arrive just after I had finished a session and then had to sit in the refrigerator until my next session. If you are able to offer fresh yeast with a 2/3 day delivery then I would be more than happy to use that service.

I do bake bread every week including sourdough using my own leaven, but I have never used fresh bought yeast, just fast acting. It was interesting to read about the difference in the manufacturing process vs. non organic which does appeal to me, so I thought I would test it by making a 100% Spelt loaf which is always a challenge to get a risen crust, mostly they look sunken, does not affect the flavour just looks a little unappetising. I am very happy to report that the rise was good and indeed the crust stayed convex, most importantly the taste of the loaf had improved. I am a satisfied customer who will be buying this product again.

This is excellent. It arrived promptly in a little packet & was put in the fridge. I used it a few days later to make a Farmhouse Loaf. Left overnight in a sponge of flour and water, it proved very lively, starting to ferment immediately and worked very well. I've also made pizza dough with it. Not used fresh yeast before but found it easy and reliable. Excellent product.

I found using this yeast a real treat. The bread seemed to be a lot lighter. The flavour seemed to be a creamy taste which we really enjoyed, the crumb also seemed to be crispier. The dough was a creamy colour when proving. It was a real pleasure to use. I hope you will start selling this yeast.

have made 2 loaves and a couple of nan breads. the white loaf was a good mix had to use less water, the wholemeal worked very well. the nans came out well shaped. I would recommand the use of fresh yeast (hope the price is relevant to the goods.
