“The yeast arrived through the pits well-packaged and with instructions to refrigerate. I used it to make my weekly bread (which as always was 2 multiseed wholemeal loaves and a bunch of bread rolls for packed lunches) it was marvellous and gave great results. Very happy!”

“The yeast arrived fresh and well packed. I stored it in the fridge to 2 days and then made 60/40 brown/white very strong flour bread. The dough rose quickly on the first and knocked back proving and the bread tased good, with an even spread of rise. I normally use fast action dried yeast and the Bioreal yeast worked as well, with a slightly better taste. I would use it again, but cost and longer term storage are a problem. I have frozen fresh yeast before when bought in quantity but the defrosted yeast is more difficult to use and loses some goodness.”
“Made two loaves a Barleycorn flour cob using 14g yeast to 500g flour and a prune and chocolate loaf using 20g yeast to 500g flour, 200g chopped prunes and 200g chopped dark chocolate. “I am very impressed by this yeast and would highly recommend this product. The packaging is good and the yeast remained fresh and crumbly when kept in the fridge for more than a week.It was very quick to start bubbling and doubled in size far quicker than the standard dried yeast I use normally. The flavour of the finished loaf was superior to normal and I certainly will be placing an order. The packaging stated it was enough for 500g of flour, but less could be used if you want to be economical. Fantastic.”

The following remarks summarise my initial impressions from the brief test. 1.The yeast smelt like a brewers beer yeast but the resulting bread was not obviously flavoured by the yeast. 2.The yeast gave a slower rise than fresh yeast from a supermarket. (I often use Morrison's fresh yeast), even when using the Bioreal yeast at about the recommended level which is 1.5 times the level of yeast that I would normally use. 3. The bread resulting when using the Bioreal yeast had a fine even structure with small "holes". It was soft but very firm, not easily forming crumbs when sliced, so good thin slices could be easily made. 4. The first impressions were thus very good, but I need to experiment further to see if the better results were simply due to a lower activity than Supermarket yeast or due to some inherent superiority of the Bioreal yeast. “I found that this brand of yeast is slightly more active than the fresh yeast that I normally use from Morrisons (Yes, I know, I know), so I cut down the amount by about 25% and it did the job perfectly. It's splitting hairs really, the first loaf turned out fine too, sorry that I don't have any pics. If you decided to sell this on your website, I'd buy it, no problem. Thanks for letting me try it!”
