“When i had to make bread living in the East in the middle years in 2000, i had the book Bread Matters by Andrew Whitley. This book taught me about all ingredients in bread making including the differences between conventional yeast and organic ones. Bakerybits does a good job by wrapping them in constructed soft paper boards in order to protect them from being squashed during shipping. i use only a tiny amount to make poolish or biga which are then used to ferment large doughs for different types of breads, and even for steamed oriental buns.”
