I have made boules from this and even had an einkorn starter for a while but this flour is not cheap. I find for the best bang for my buck I blend it 20% into my T65 flour and make the most delicious sourdough baguettes - a recipe I have now settled on after several months of experimenting. The crumb is light and fluffy and the crust has a nice crunch to it. Thanks BakeryBits for introducing me to this treat.

I make Italian country bread with this, often mixed with some Sfarinato. It makes a lovely bread with a good crumb and amazing flavour.
