I mixed with T65 and it made great bread. Adds a wonderful nutty taste to the bread.

Especially good when you are making a straight-up loaf which does not have a long ferment.

Have been using this flour for over three years now…..it is a go-to. Usually mix with Bread Flour flour (around 14% protein), sometimes along with Rye. Always an awesome loaf with great crumb and flavour. I really love the creamy colour and tender texture of loaves baked with this Organic Enkir. Thanks again, Bakery Bits.
