“Once again, the flour arrived in excellent quality and well packaged. Decided to try a stronger protein content flour for my sourdough loaves which usually consist of 80% strong white flour and 20% wholemeal type. Not quite sure if i'm finding the flour to be a bit too strong, still testing it out but i can say that it would be excellent for high hydration sourdough. Still assessing the results for my needs.”

I made one loaf with just this and nothing else, and decided that probably it needs to be calmed down by being mixed with something else (the loaf nearly burst out of the Dutch oven!).
