“Delicious flour. Great water absorption. I've been using it in tourte du Meule, pain du campagne and sourdoughs. I've found that despite the good absorption it doesn't feel as strong as other doughs so needs a slightly gentlier touch. All in all, a great flour. I'll be buying again.”
