Nice to find something different, I have been looking for 'Charcoal powder' for some time after having 'Charcoal' baguettes from a local artisan baker. I am still experimenting, trying sourdough and yeasted boules, which were fine , but the crumb was a bit soft especially in sourdough, but will try again. Today I have made carbon mini baguettes,using a poolish, baked on my new Bakerybits baguette trays, they have come out very good with a good crisp crust. The carbon powder doesn't impart any flavour, but makes very interesting bakes, that look good.

I have been baking for over 50yrs, but now I have found BakeryBits I am on a mission to greatly improve, never too old to learn! I have just used my new 30 x 40 granite stone and metal peel, made a fermented dough french bread, added some carbon powder, brilliant, best oven spring ever. Keep looking at website to see what I can try next, it's becoming addictive. Great response when I emailed and phoned, thank you.
