Coming from successfully using sugar for baking, I have baked two loaves in succession using only Diax - both attempts failed to produce any sugars for the yeast, hence no rise for both loaves.
I have tried to test the Diax activity for a third attempt, but again I did not find any signs of the starches in my white bread flour turning into sugar.
The Diax package states that an expiry date can be found on the bottom of the packaging, yet this is not the case on my packaging, therefore i can only assume that it is past its exiry date?”

“Very happy to have found this company (on the recommendation of the instructor at my bread making workshop) as they sell malt flour in small quantities for a reasonable price and I had been unable to find anyone else who did so.

“I haven't had a chance to use this yet but I was delighted that
a) I could actually get it and
b) that it is sold in sensible weights.
I am looking to use it in a pizza dough recipe and as there is only my husband and I, I don't need huge amounts of it.
The other great thing is they deliver to Shetland the same as the mainland.”
