Followed the recipe for slow roast Boston Butt you have on line and the meat was amazing , however the joint you sent was very very fatty which was dissapointing

One of the features of our free-range, traditional breed pork is that it has a good fat content - we feel this is essential for flavour and a positive feature when slow cooking particularly. Regular order for me now. 12 hours on the off-set smoker - tender as you like with a great depth of flavour. Good fat cap & not too much internal fat, so easy to render & develope a deep smoky flavour.

Lots of fun cooking this classic US style cut low'n'slow over charcoal and applewood chunks. Family demolished it.
