“Lots of tender meat, none of it dry. I put 100g of butter and herbs under the skin and basted once in the three hour cooking. The result was full of taste and succulence.
Next time I would use a trivet as at least 500mls liquid given off.

“We had never tried cockerel before but with a family of 6 and no one liking turkey we were buying 3 chickens to roast from the normal supermarket. That along with a hatred of unsustainable factory farming was causing a reduction in how often we bought meat but my kids love chicken and they don't change their minds easily. Then we found Swaledale and our meat eating world changed. I tried a lovely large chicken from Swaledale in September 2022 to test size and enjoyment for Christmas Dinner. Everyone loved it so much that we were decided, although considering 2 as they only really eat the chicken so we need lots, until the cockerel was put on the site. I persuaded my very particular autistic children that it would be a amazing as the new chicken provided by Swaledale but fit for giant people and we gave it a try with fingers crossed and an emergency supply of the giant chicken breasts, my kids love and joke come from dinosaurs, at the ready just in case. We'll never have a Christmas meal without the cockerel again, at least not on purpose. The only complaint was that we had to wait until Christmas again to have it! One of the kids truly thinks Santa brought a type of chicken especially for him because it never stops and he eats nothing else. We had plenty for a full hungry family of 6 and had enough for boxing day sandwiches for all. If you're lucky enough to have a good stock pot the carcass and leftovers can be made into a great homemade stock or, my own personal choice, a great homemade soup using all the veggies and cockerel carcass with the the cockerel being the only thing that's been changed in my Irish family recipe ever. I'm sure my granny and my mum would've approved with the addition. Well worth the cost and the early order.”
