“I think my mistake was to imagine this would be like traditional Italian porchetta. There was nowhere near as much fennel flavour as I expected, and because of the stuffing (not a traditional element) I followed there recipe provided rather than my usual recipe. This was a mistake. The finished product was much fattier than I had expected, because it was cooked for a much shorter time, not allowing the fat to be rendered out.”
