Well all I can say the meat was superb .I slow cooked it in the aga for 6 hours covered in veg stock,banana shallots ,chunky cut carrots and celery and seasoned with cracked black pepper crushed fennel seeds and some star anise and a couple of crushed cloves of garlic and smoked garlic .The warm bagels were filled with sauerkraut gherkins mustard and warm sliced salt beef with a little of the liquid. The meat was a beautiful pink colour,moist and succulent with very little shrinkage .It is now my and my husband’s favourite weekend brunch treat and will be ordering more joints for when family come to stay .The meat cold was equally delicious and we also made some meat and potato hash .Another fantastic cut from swaledale”
