“This was the first time I had a rolled sirloin from Swaledale for Christmas, I usually order their rib of beef but decided I would go for something different this year.
I always do my beef joints low and slow, so I cooked this joint at 65deg from the 'getgo', and it took about 4 and half hours for the 3.2kg joint. I then ramped up the oven to 240 and blasted the outside fat for ten minutes and then let it rest for 30 minutes.
It was absolutely perfect. Pink (medium rare) all the way through from the first slice to the very last, with crunchy outside fat, beautifully tender and the flavour was superb. We all agreed it was a triumph, and because it was rare, it made an excellent cold buffet on Boxing day with jacket potatoes.
Good to know that that box is already ticked for next year.”

“Sublime bit of beef! I was a very nervous meat cook having never got my head round roasting large expensive cuts, but after recently acquiring a Thermapen (for sourdough baking) I decided to learn how to do this . . . so I researched where to get some really good beef and went for Swaledale and the smallest version of this rolled sirloin, and am so glad I did. I took it out of the oven when the internal temperature hit 50 degrees C, rested it for 25 minutes, and it was absolutely gorgeous, thank you!
