Our Galician beef fillet comes from retired dairy cows between 8 and 12 years old, sourced from the Northwest of Spain. This type of ageing allows for natural grass-fed marbling of the beef, comparable to that of genetically optimised grain-fed US, Japanese and generic Wagyu beef. The older cows have a higher percentage fat content and more marbling, giving the fillet a distinct and unique flavour. All our galician fillets are dry-aged for a minimum of 7 days. Also known as Filet Mignon, Tenderloin, and the Eye Fillet, this is a lean, mean, and amazingly tender cut, prized for its quality. It can be enjoyed by either cooking it as steaks or roasting.

“Beef how it should taste. As these fillets are from older animals their flavour is perfect and also a reasonable amount of marbling . The tenderness of fillet with the flavour of a rib eye and at a very sensible price. Well done Basco for sourcing this excellent meat.”

“Buying online can be a risky business particularly when choosing food. Every is described using hyperbole beyond imagination. I had waited for an excuse to buy this fillet but with a few friends for dinner I decided to risk it. All I can say is that it was as described, beautifully tender and unlike beef fillet from my past it was truly flavourful. Because of timing I had to freeze it for a week or so but there was no apparent loss of quality. The fillet needed a bit of trimming but this was not onerous. I've bought another one and cut it in half and frozen it so that I don't have to wait for a big group to do it justice.”
