Our favourite. Tender and delicious. It shrinks though. So cook more than you’ll need.

We had this for lunch yesterday and I am afraid it was a bit of a disappointment. It shrunk a lot when cooked so can't imagine the whole thing feeding 10-12. We cut it in half as there are only 2 of us and we didn't have hardly any leftovers. Also the skin did not crackle at all. That, of course, is the best bit (well normally would be) but this ended up more chewy than anything else. We tried different ways to sort this and it either stayed the same or started to burn. Also didn't seem like the whole pig, only the porchetta, so should be labeled this way. It was good, but at the price, I don't think we'd get it again.

Outstandingly tender, beautifully crisp thin skin. A real treat.

Superb but do not be tempted to not cook for as long as recommended... it needs the time to let the fat melt inside. It was delicious.

This is a very easy way to cook suckling pig. Previous suckling pigs have been difficult to get into the oven. I have previously had to bone the pig to accomplish this, much easier to have it done for me. The flavour is light and delicious with less fat than pork, However the crackling, although good, cannot be so crispy with less fat under the skin. I have ordered one for Christmas dinner.
