I bought the boneless suckling pig for an alternate Christmas dinner. The humble swine has to be the most underrated and versatile animals. I barbecued the pig after sous-vide it 24hr the night before and the sweet and succulent fresh was rendered done to perfection and taking on the subtle smoke. If you cook the pig long and slow then all the wonderful fat and flavour goes into the meat and your left with some of the most flavoursome and sweet meat period. It is not cheap; however when considered against he quantity and quality of meat, it is good value. I like it so much I've bought my 2nd joint for my birthday dinner, no higher recommendation than that!

I had never cooked a suckling pig boneless or! This was delicious. I followed the Basco recipe to cook it and everything went brilliantly (well it's not difficult, just a roast!) The crackling was perfect! We all throughly enjoyed for a Mother's Day feast.
