After purchasing the large pullman by mistake Bakery Bits were very helpful and let me exchange it for this smaller version. It feels a quality baking pan. I have had consistantly good results - after adjusting my bread recipe for quantity to fit the pan. The bread comes out easily after baking. I tried the suggestion of taking the lid off for the last 10 minutes or so of baking to brown it and also browning the top under the grill. Both ways work well to give extra colour to the bread but I find now we are used to the paler top I don't bother to do this. It is lovely having the square shape for sandwiches, very easy to cut as opposed to free form or ordinary tins without lids. This is a good length of tin for bread but if there were a pullman tin of the same length but larger 'girth' I would snap it up as the slices are very small at 10cm square. Overall it is a brilliant piece of kit.

After trying off and on for a number of years I have finally come across bread making recipes that give wonderful results with Richard Bertinet’s good, ‘Dough”. This pan is perfect for his everyday loaf, pain de mie. As I bake with an Aga solid tins and pans are essential and I could not have asked for better than the heavy grade, ribbed USA Pullman pan. I will certainly be buying more from Bakery Bits…a treasure trove of goodies!

I bought this pan last week, two loaves of bread have both come out perfectly. I used the Pain de Mie recipe on the site but I left out the sugar.

This is a really great pan with an excellent finish. Produces a lovely loaf for toasting. Lightly oiled the loaves slip out easily. Slice and freeze ready for breakfast as needed.
