I’ve used this on its own to make sourdough and the crust is very crisp. Our household prefers it mixed 50/50 with a different strong white flour for a crisp thin crust. Beautiful texture, flavour.

Well, what can I say! I use this flour in my sourdoughs, it has a high protein content, perfect for a great gluten network. Give it a go.
