I recently bought a 25kg sack of this, having been very impressed with the 2 x 5kg sacks I had purchased previously. The first batch were fantastic. Despite slightly lower protein than I would normally use the hydration tolerance was superb. The 25kg bag is like a totally different flour. Still usable but the hydration tolerance is a good 5% lower leading to some sticky messes from reliable tried and tested recipes. Very disappointed in the inconsistency between batched. Especially since I have used T80 and the organic T65 as well from this Mill and all were fantastic.

Only place able to fulfil an order in a sensible time in lockdown- arrived sooner than expected and great baguette flour.

I’m absolutely delighted with this book and DVD, so much so that I’ve now bought Crust too. The instructions are very clear, I found Richard Bertinet’s kneading technique relatively easy to master and very easy to follow on the DVD and it’s given me vastly improved results compared to my traditional kneading technique. So far I’ve baked very successfully (thanks to the great recipes and step by step instructions) the fougasse, sweet dough loaf, the pain de mie, pizza dough and smoked bacon and red onion rye bread and planning to bake the cider bread and fruited tea loaf tomorrow. I can not recommend both books enough. Crust is great too, buy both books, you won’t regret it - and absolutely excellent customer service from Bakery Bits too, thank you!
