“I was hesitant to get the Challenger bread pan but kept wondering if it would make such a big difference to my sourdough home baking, so I finally caved and ordered it. I have never looked back since - not only has it made the whole baking process so much easier and less messy (no repeated water spraying into the hot oven anymore), the oven spring has improved greatly, as has the openness of the crumb and crust texture. The design itself makes it very easy to place the loaf into the hot pan and also to remove the lid during baking. The pan itself is made of high quality cast iron and will last a lifetime. It's a hefty piece of kit and it lives in our household by the side of the oven. Since I have been using it, chance has been taken out of the equation and it's the best oven spring I have achieved.
The bread is always tasty and the crumb is open and uniform.
If you have the cash, space to store and muscle to move it into and out of the oven then go for it!”
