“I bought this on Dan Leppard’s recommendation in the cider sourdough recipe but was sceptical it could be so much better than the readily available alternatives.
I was wrong! It seems to generate a rise and texture which is remarkable. I’ve read complaints of an unpleasant smell from the yeast. Honestly, I have NO idea what people are talking about.
I’ve used this now for maybe 6 weeks. I’m a convert! Wouldn’t use any other now.”

“Although I make most of our bread I’m not sure this was the right yeast for my every day bread. I find it is very active and fast in the first rise but seems to lose effort in the final prove. Next time I use it I’ll only let it have half an hour in the initial rise. In the last use I I added a little sugar and that speeded things up even more. It is an interesting product which gives the bread a wonderful flavour. I would be very interested in more experienced opinions on how to get the best out of this yeast. Russell”
