“This flour is some of the best I've ever used, my sourdough starter (Aileen) loves this for it's feed, I do 50/50 mix of this and white bread flour for feeding, never fails to double in size, very predictable.
Great in bread to if you substitute 20% of white flour for this, gives it a much softer crumb with a much more complex flavor.”
