I have bought both Gilchester strong white and wholemeal within the last few weeks. They are the best two flours that I have ever used. The white is more like a pale brown but the taste is miraculous- complex but well integrated. The wholemeal was mixed with the Priors strong white (40% wholemeal) and produced the my best ever wholemeal loaf. Both loaves were prepared using autolysis. Hydration was 72% for the white and 75% for the wholemeal. Handling the dough was slightly tricky but made easy by the red scrapers that I got from you recently. My only regret is that your star system only goes to five. Ten stars would be more appropriate!

I wanted a flour that would feed my sourdough starter and make good loaves and this does the job!

If you want organic stoneground sifted flour, this has to be top of your list.
