“I have bought both Gilchester strong white and wholemeal within the last few weeks. They are the best two flours that I have ever used. The white is more like a pale brown but the taste is miraculous- complex but well integrated. The wholemeal was mixed with the Priors strong white (40% wholemeal) and produced the my best ever wholemeal loaf. Both loaves were prepared using autolysis. Hydration was 72% for the white and 75% for the wholemeal. Handling the dough was slightly tricky but made easy by the red scrapers that I got from you recently. My only regret is that your star system only goes to five. Ten stars would be more appropriate!”
