“Whilst I love the look of a loaf from a cane banetton, this lined version is guaranteed not to stick, which is sometimes essential when for example I've made a dough with 95% white flour and at 80% hydration, which is a wet old dough - the rise and holes look amazing, but then you don't want the outside of the loaf to be less than perfect! A little extravagant perhaps, but worth it - especially as you can of course wash it, so it's hassle-free perfection. I'm a home baker (only mildly obsessive) and use it on every weekly bake.”
