After having spent lots of time getting a better texture and crumb, diax seems to have taken me backwards. Will therefore not suit everyone.

I’m a bit of a devotee of Diax, but after becoming so used to using it I wondered how much difference it was really making. So...in the interests of curiosity I baked a loaf of my ‘summer bread’ without it. My curiosity is now satisfied - and I won’t be baking without Diax again!! The oven spring was great, the crumb was perfect, but the crust looked a little bland (by normal standards) and just didn’t have that Diax ‘zing’. So now, whether it’s sourdough, baguettes, summer loaves or anything else, the 1% of magic dust is going in.
