“Let me say first that the 2 star rating is purely for the Diax *not* for Bakery Bits, who are great. It's just that I can't say I've really noticed a difference in my bread by using this as an additive and I wonder what all the fuss is about. I'm a reasonably experienced baker and I've used the Diax in both sourdough and standard, yeast-based loaves but I can't see what it brings to the party - my loaves just don't seem any different. I have stuck to the guidelines probably using no more than 3/3.5 gr per 500 gr of flour as I'm aware that over 5 gr would make the crumb 'gummy'. Maybe it's because of the flour I'm using (Stoates, which is great) and it just doesn't need the extra assistance. Unless someone can convince me otherwise or show me what I'm doing wrong it's not something I'll bother with again.”
